Cleaning and Sanitization of Kitchen Exhaust Systems
Kitchen exhaust cleaning is the process of removing grease that has accumulated inside the ducts, hoods, fans and vents of exhaust systems of commercial kitchens. The exhaust system is first scraped clean and then washed clean with food safe caustic chemicals and pressure washed with hot water where possible to safely collect dirty water by-product.
Reasons for cleaning
The main reason is the possibility of a fire hazard, which results in damage to life and property. It also affects the working operations of the restaurant and affects the financial state of the business
Excessive grease deposits and build up also leads to excess overload on the exhaust fan. This reduces the efficiency of the exhaust fan and eventually leading to overheating and high repair/replacement costs.
As a result of the poor efficiency of the exhaust system, the atmosphere inside the kitchen becomes uncomfortable due to heat retention. This creates a difficult environment for the kitchen staff, leading to tiredness and poor performance.
Grease build up also leads to compromising the duct integrity as a result of which you end up having oil leaks. In addition to the untidy appearance you could also end up having a hefty fine from the respective local municipality.
